I am proud to be a member of the Real Bread Campaign. I shape all my bread by hand – in the traditional way.
Real Bread is:
- Tastier (and chewier!): it uses less yeast and has a longer fermentation period. It does not involve the use of dough conditioners, flour 'improvers', processing aids, chemical leavening or any other artificial additives.
- Better for you: low salt and no preservatives or additives are used in my bread – just flour, water, sea salt and fresh yeast. I use high quality, local ingredients - my flour comes mainly from Marriages via Letheringsett Mill near Holt, Norfolk.
- Better for the environment: all my bread is, wherever possible, delivered by foot or trolley in Southwold and Reydon. I also use minimal packaging.
I also make a range of artisan cakes, biscuits, scones and breakfast cereals: all hand-made with the best quality ingredients and with no short-cuts.
